Homemade Vegetable Fried Rice


2 or 3 cups cups of parboiled rice cooked

In a large oiled skillet

Sautee chopped, sliced or jullienned carrots for about 2 minutes
add chopped fresh brocolli – about 1/2 to one cup each
add sugar snap peas – can be frozen or fresh
let it steam fry for about 2 or 3 minutes
at 2 tablespoons of fresh chopped garlic with 1/2 cup of fresh chopped golden onions or scallions
Fresh chopped or sliced mushrooms – about a 1/2 to 1 cup
1/2 red bell pepper -optional
1/2 block of extra firm tofu cubed – optional

Sautee until fairly tender – do not over cook – retain a little firmess with veggies. Add soy sauce or liquid aminos to taste (1/3 cup perhaps). be careful not to put too much soy or aminos in that they tend to make a dish too salty…measure your taste carefully.

Mix into stirfry into the cooked rice….you can add more rice for your taste.
